Salty Canadian
Cold brew, maple foam, and a pinch of sea salt over a tall glass of ice.
Method
Fill a tall glass halfway with ice cubes.
Pour 1 cup of cold brew concentrate over the ice and let it settle.
In a small jar or frothing pitcher, combine the milk, maple syrup, and a pinch of sea salt.
Froth the mixture with a handheld frother until it doubles in volume and looks like soft cloud, about 30 seconds. No frother? Shake it hard in a sealed jar for a minute.
Spoon the maple foam gently over the cold brew so it floats on top. Finish with another small pinch of sea salt. Serve immediately.
Some mornings ask for something cold, sweet, and a little bit reckless.

A porch in late August
This is what you make when the morning is already warm and the coffee pot feels like too much. Cold brew, poured long over ice, with a layer of milk that has been shaken hard with real maple syrup and a pinch of sea salt. The salt is not a garnish; it is the reason the maple stops being sweet and starts being interesting.
It tastes like a long weekend. A wooden chair, a dog under it, a paper you keep meaning to read. The kind of drink that makes you slow down because the glass is already sweating and there is no rush to be anywhere.
Use real maple syrup, the darker the better. A splash of oat milk works if you do not drink dairy. And keep the foam fluffy — that is half the point.
