Gin Cucumber Dill Highball
Gin, lemon, and muddled cucumber and dill, lengthened with soda water.
Method
In the bottom of a shaker, gently muddle the cucumber and dill with the lemon juice and simple syrup.
Add the gin and a handful of ice. Shake briefly — five seconds, just to chill.
Strain into a tall glass filled with fresh ice.
Top with soda water. Stir once. Garnish with a cucumber slice and a sprig of dill.
A drink to drink between courses, not during them.

The refresh
This is the drink to reset the table between the trout course and the latkes. Light, herbal, very cold, low enough in alcohol that it does not compete with the food. The cucumber gives it weight without sweetness; the dill gives it a garden note; the soda lifts it into something you can drink two of without thinking.
